I am not a Viking.
I mean, I plan on sleeping soon, but my brain's still rebelling. And meal planning. I hate meal planning.I need to come up with an inexpensive yet tasty entree that will reheat well so that I know what to get when we go grocery shopping on Sunday. Tragically, I'm sick of everything I can cook on the cheap.
I miss take out. With take out, you just had to choose an area of the world, narrow it down to a specific country, and order some vague facsimile of a popular regional dish. Take out ruled.
My brain needs a new spin doctor. All the one it has can come up with is, "It's more than just a way to save money! Cooking at home is teaching your child valuable life-lessons!"
You know, my parents cooked at home.
It taught me that damn, some days, I'd really rather just have mediocre Chinese.

When we lived in Wyoming for a year, and I was a) bored out of my mind, and b) pregnant with Ben, I cooked every night. I was trying to do $75 a week for groceries, and I was planning the week's meals with leftovers included. It was an interesting experiment for someone who doesn't like to cook or budget.
Can you do a roast chicken and use the leftovers for a pot pie, or chicken salad? I used to make a huge meatloaf, and have that leftover a second night. I'd also do spaghetti and meatballs and make meatball sandwiches the second night. (Stephen is a huge meat-eater, if that's not appalling clear.)
Damn. I know there was more to my repertoire, but it's hard to remember nine years later.
Lasagna or chili. Leftovers for MILES. (There's also this macaroni salad I like, but it's more of a warm-weather dish.)
Sometimes, I plan a "Mexican week" where I get lettuce, cheese, tortillas, meat/beans and sour cream and try to make as many different types of meals as I can from those ingredients.
We usually get tacos one night, enchilladas another night and maybe a taco salad or nachos another night. It stretches the fresh ingredients longer but it can get boring doing the same ethnic food several times in one week.
